1. The time of collection of tea leaves

Tea is classified according to the time of collection into spring tea, Ming Qian tea, tea before the rain, summer tea, autumn tea and winter tea. Such as West Lake Longjing, Dongting Biluochun, Huangshan Mao Feng, Lushan Yun Wu, Quancheng Red, Quancheng Green, etc. belong to the spring tea, is the early spring collection of tea; Xinyang Mao Jian, Oolong tea, Tieguanyin and Ming Qian Chun, etc. belong to Ming Qian tea, is the tea collected before the Qingming; before the rain tea is the tea collected before the ancient language; summer tea, autumn tea and winter tea are summers, summer tea collected after a month and the autumn equinox after the collection of tea leaves.


2. Altitude of tea origin

Tea is divided into alpine tea, hilly tea and flatland tea according to the altitude of origin. High mountain tea is tea produced in tea gardens at an altitude of 1000 meters or more. The highest tea gardens in Taiwan Province are 2500 meters, while the general tea gardens are 1200-1600 meters above sea level and are famous for Taiwan's high mountain tea. The hilly tea area is mainly in the northeastern part of Anxi County, which is an ecologically suitable area for tea trees.


3. The degree of fermentation of tea leaves

Tea is classified according to the degree of fermentation into fully fermented tea, non-fermented tea, semi-fermented tea, post-fermented tea and lightly fermented tea. Yellow tea and black tea are fully fermented teas. Green tea belongs to the only non-fermented tea, including Biluochun, Longjing, Zhucha, Zhubao, Pancha and other eyebrow teas; black tea, oolong tea and white tea belong to semi-fermented tea; post-fermented tea is a type of black tea; Wuyi tea, Tieguanyin, Mingde tea, Yilan bao seeds, Nangang bao seeds, fragrant slices, frozen top tea, Songbai Evergreen tea and Shui Xian belong to lightly fermented tea.






4. The degree of processing of tea leaves

According to the degree of processing of tea leaves, tea leaves are divided into basic teas and reprocessed teas. The basic tea category is divided into two parts: gross tea and finished tea, of which gross tea is divided into green tea (including yellow tea), white tea, black tea, oolong tea and black tea. Finished teas include refined green tea, black tea, white tea, oolong tea, etc. Reprocessed teas include floral teas, tightly pressed teas, liquid teas, instant teas and medicinal teas.


5. Export classification of tea

Tea is classified according to the type of tea exported from China into green tea, white tea, black tea, oolong tea, flower tea, tightly pressed tea and instant tea, etc.


6. The origin of tea

Tea is classified according to its origin into the Jiangbei tea region, Jiangnan tea region, Southwest tea region and South China tea region. According to the province, it is further divided into Min tea, Sichuan tea, Zhejiang tea and Taiwan tea, etc. According to the specific place of origin it is further divided into Hangzhou Longjing, Anxi Tieguanyin, Funding White Tea, Wuyi Rock Tea, Qimen Black Tea, Liu'an Guaqi, Fuzhou Fragrant Piece, Darjeeling Black Tea, Xingcun Xiaoshu, Frozen Top Oolong, etc.


Representative teas of the six major tea groups


Tea can be divided into six major tea groups: green tea, black tea, yellow tea, oolong tea, white tea and black tea. Each tea category has its representative tea, which are as follows

  • Red tea is represented by Dian Hong, Ning Hong and Qimen Black teas.
  • Yellow teas are represented by Huo Shan Huang Ya, Jun Shan Yin Zhen, Meng Ding Huang Ya and Huo Shan Da Huang Cha.
  • Green teas are represented by Xihu Longjing, Anji White Tea, Dongting Biluochun, Xinyang Maojian and Zhucha
  • Oolong teas are represented by Tieguanyin, Da Hong Pao, Frozen Top Oolong and Phoenix Sinensis.
  • White teas are represented by Bai Hao Yinzhen, Bai Mu Dan, Gong Mei and Shou Mei.
  • Black tea is represented by Yunnan Pu'er tea, Anhua black tea, Hubei green brick tea, Hunan Fu brick tea, Guangxi Liubao tea, old green tea, and Sichuan side tea.
